Ingredients: Feeds 4
- EVOO
- 1-2 tbsp fresh ginger, chopped
- 1 medium jalapeño, seeded and chopped
- 1 tbsp garam masala
- 1 tsp smoked paprika
- 1, 14 oz can of tomato sauce
- 1/3 cup water
- 1/4 cup raisins (I like golden)
- 1/4 cup pistachios, chopped
- 1 small onion, chopped
- 1 bell pepper, chopped
- 1 tsp cumin seed
- 1 1/3lb ground turkey
- salt and pepper
- 1/4 cup light cream
- 2 tbsp honey
- fresh cilantro, chopped
- 4 brioche buns, toasted
Directions:
- In a medium saucepan, drizzle approximately 1 tbsp of EVOO and turn heat to medium. Add ginger and jalapeño to the hot pan and sauté until soft, about 5 minutes.
- Next add the garam masala and smoked paprika, stir to incorporate. Add the tomato sauce and water to the mixture, stir, bring to a boil then reduce to a simmer and cover.
- In a second saucepan, drizzle more EVOO and turn heat to medium/low. Add the raisins and pistachios to the hot pan. Toast (stirring often) until raisins plump and pistachios become fragrant. Remove from pan with a slotted spoon and reserve.
- Next add the onion and bell pepper to the new pan and sauté until soft. Add cumin seed and cook an additional minute or two. Transfer mixture to the original saucepan, stir to incorporate.
- Use the second pan to brown the ground turkey. Season with salt and pepper to taste. Transfer cooked turkey to the sauce, add the raisins and pistachios, then the cream and the honey. Stir well and cover. Let simmer for 5 minutes, stirring once.
- Garnish with a handful of chopped cilantro. Serve a generous spoonful atop a toasted brioche bun!
