Slow Cooker Tex-Mex Turkey Veggie Chili

Now that’s a mouthful! This recipe is a staple ’round these parts because it takes just minutes to assemble, practically cooks itself, and satisfies bellies with its hearty southwestern flavor. I get a little help from a store bought spice packet but I ratchet things up a notch by adding additional spice, liquid smoke and half a can of beer! You can’t go wrong on a cold night with a warm bowl of chili and chips…

Ingredients: Feeds 6 – 8

  • cooking spray
  • 1 lb lean ground turkey, browned
  • 1, 28 oz can crushed tomatoes (I use “fire roasted” tomatoes)
  • 1, 15 oz can black beans, drained
  • 1 red bell pepper, seeded and chopped
  • 1 green bell pepper, seeded and chopped
  • 1 poblano pepper, seeded and chopped
  • 1 medium Bermuda onion, medium dice
  • 1 Tex-Mex Chili seasoning packet (I use McCormick’s)
  • 1 tsp cumin
  • 1 tsp dried cilantro
  • 1 tsp paprika
  • 1 tsp dried minced garlic
  • dash cayenne pepper
  • 6 oz of beer (I use Corona)
  • 1 tsp liquid smoke
  • salt and pepper

Directions:

  1. Spray the inside of your slow cooker with cooking spray.
  2. Brown the ground turkey in a skillet on the stove.
  3. Combine tomatoes, beans, chopped peppers, onion and seasonings in the slow cooker. Add the turkey, beer and liquid smoke. Mix well.

4. Cook on LOW for 4 hours, stirring occasionally. Taste and adjust seasonings with salt and pepper if needed.

5. Serve over rice or with tortilla chips. Garnish with fresh cilantro, sour cream and/or shredded cheddar cheese.

Power Bites, Take 2!

We’re addicted in this family to having these tiny bundles of goodness on hand!  So much so, that together my daughter Grace and I, created a new flavor combo so we could mix it up and add some variety to the daily grind!  We are in LOVE with these new power bites and we think you’ll agree, they are the perfect combo of sweet, salty and satisfying!

Ingredients: Makes approximately 2 dozen bites

  • 2 cups rolled oats
  • 1 cup almond butter
  • 1/2 cup raisins
  • 1/3 cup honey
  • 1/3 cup white chocolate chips
  • 1/3 cup toasted, salted pepitas
  • 2 tbsp flax seed
  • 1/3 cup unsweetened shredded coconut
  • 1/2 tsp sea salt

Directions:

  1. Combine all ingredients (except the coconut) in a food processor and pulse until incorporated.
  2. Refrigerate for 30 minutes.
  3. Using two hands, form balls from the mixture; each should be the size of a small meatball and should fit in the palm of your rounded hand.
  4. In a small bowl, mix the coconut and sea salt. Roll each power bite in the mixture to coat.
  5. Store in an airtight container in your fridge for up to 1 week.

Fajita Seasoning

You’ll never buy the packet again!

Ingredients: Makes enough to season 2 lbs of meat or veggies

  • 1 tbsp corn starch
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp dried cilantro
  • 1/4 tsp cayenne pepper

Directions:

Mix everything together and use it to season chicken, steak, shrimp or veggies the way you would use a store bought seasoning packet.  Or… whisk in a 1/4 cup of olive oil (omitting the cornstarch) to create a delicious marinade.

Chickpeas, please!

These little nuggets of flavor are easy to make and great to have on hand!  They add spice, texture and protein to all kinds of dishes including soups and salads.  They also serve as a delicious and healthy snack food.

Ingredients:

  • 16 oz can of chickpeas (garbanzo beans), drained and rinsed
  • 1/4 tsp each: cumin, turmeric, paprika, red pepper flake and dried cilantro
  • salt and pepper to taste
  • 1 tbsp olive oil

Directions:  Heat olive oil in small sauté pan.  Add chickpeas and season with spices, salt and pepper.  Sauté to desired crispiness (5 minutes as pictured).
